Green Fluff Jello

It’s been WAY too long since I posted anything new. My apologies — kids home from school for the summer — family visiting from out of state — swimming lessons — going to an amusement park with the family — starting a new online job — keeping peace in the home — all these things have contributed to no recipes being posted as of late.

I hope you too have been enjoying your summer; here is a super simple jello recipe that is great for picnics, potlucks or any get-together.

Green Fluff Jello

(serves 10 people) Prep Time: 10 min. Cool Time: 30 min.

1 small pkg instant pistachio jello
1 can crushed pineapple
1 8oz container whipped cream
1 pkg mini marshmallows

In large mixing bowl, combine pineapple and jello, mixing well (chill in fridge for about an hour if you can).

Stir in marshmallows, mixing well.

Stir in whipped cream, mixing well.

Refrigerate immediately. Serve chilled.

Black Bean Brownies

OK . . . you’re all on the EDGE of your seats waiting to hear what we had for dessert last night, right?  Well, I get to introduce you to my littlest guy and my littlest GF eater, Tyler, in these photos.  He was SOOOOOO excited to make (and eat!) brownies!!!  His favorite “Tigee” helped us make the brownies too!

Don’t knock it ‘til you try it!  These are amazing!

Black Bean Brownies  (serves 8-10 people)

Prep Time: 5-10 min. Cook Time: 30 min.

1  15.5oz can black beans (rinsed & drained)

3 eggs         

3 tablespoons oil

4 tablespoons cocoa powder

1 pinch salt

1 teaspoon GF vanilla

¾ cup sugar

1 teaspoon GF baking soda

1 teaspoon GF baking powder

Preheat oven to 350 degrees.

In blender*, blend oil, eggs, vanilla and beans.

Add cocoa & sugar, then blend again.

Add salt, baking soda & baking powder and blend very, very well, making sure the beans are completely liquefied.

Scrape sides of blender as needed.  Pour into greased 8×8 cake pan or casserole dish.  Bake for about 30 minutes; let cool completely before cutting.

Serve with cool whip or ice cream!  Drizzle some chocolate syrup for a real treat!  YUM!

OPTIONAL:  Blend in ¼ cup peanut butter for chocolate peanut butter brownies!

OPTIONAL:  Sprinkle with some chocolate chips after pouring into pan and press them down into the batter, then bake!

OPTIONAL:  For more cake-like brownies, increase both baking soda and baking powder to 1 ½ teaspoons.  For less cake-like brownies, reduce or omit baking soda & baking powder.

OPTIONAL:  These are great to take to a party or potluck.

* Instead of a blender, you can use a quality food processor to make this.

Quick Baked-Apple Dessert

How about a quick & easy dessert?  Not only is it naturally gluten-free, it’s even fairly healthy!

Gluten-free or not, EVERYONE enjoys this sweet treat!

It doesn’t get any easier than this, and I LOVE how great my house smells while baking this treat!!!

Quick Baked Apple Dessert

Quick Baked Apple Dessert  (serves 6)

Prep Time: 10 min.        Cook Time: 15-20 min.

3 large apples (tart work best), cut in half with the seeds/core removed

3 tablespoons butter

3 tablespoons brown sugar

1 teaspoon cinnamon

Preheat oven or toaster oven to 350 degrees.  Place each apple cut-side-up on cookie sheet sprayed with cooking spray.  Put ½ tablespoon butter in the “well” of each apple.  Sprinkle some cinnamon on each apple.  Put ½ tablespoon brown sugar on each apple.  Bake for 15-20 minutes or until apples are soft.

OPTIONAL:  serve with a dollop of whipped cream or scoop of ice cream.

OPTIONAL:  a great, quick treat when someone pops over for a visit!
